Swedish Ginger Cookies

fragrant ginger cookies with the surprise smoky flavor from bacon


  • 1/2 cup melted and strained bacon fat
  • 1 cup sugar plus more for rolling
  • 4 Tablespoons dark molasses
  • 1 large egg
  • 2 cups all-purpose flour
  • 3/4 teaspoon salt
  • 2 teaspoon baking soda
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cloves
  • 1 teaspoon cinnamon


  1. preheat oven to 350 degrees.
  2. In the bowl of an electric mixer cream together the bacon fat and the sugar.
  3. Beat in the molasses and egg.
  4. Add remaining dry ingredients combining thoroughly.
  5. Shape dough into walnut sized balls and roll in sugar, flatten with fingers.
  6. Place cookies on prepared cookie sheets (silpat mat or parchment paper)
  7. Bake for 10 to 12 minutes until golden brown on edges of cookies.
  8. Allow to cool on wire rack and store in an air-tight container.
