Combine oats, flax seed, demerara sugar, pumpkin seeds, almonds, in a large bowl. In a small saucepan combine the butter, honey, cinnamon and vanilla. Cook until butter is melted. Combine the two mixtures and spread onto two large baking sheets. Bake for 20 minutes, stirring every 5 minutes. Allow to cool. Add dry fruit and store in air-tight container.
