Homemade Granola

Ingredients

  • 1 lb. less one cup rolled oats
  • 1/3 cup flax seed
  • 3/4 cup green pumpkin seed
  • 1 cup sliced almonds
  • 1 1/2 cup coconut flakes
  • 1/3 cup demerara sugar
  • 5 1/2 tablespoon butter
  • 2/3 cup honey
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 5 oz. package dried cranberries
  • 5 oz. package dried blueberries
  • 5 oz. raisins

Instructions

  1. Set oven to 350 degrees
  2. Combine oats, flax seed, demerara sugar, pumpkin seeds, almonds, in a large bowl. In a small saucepan combine the butter, honey, cinnamon and vanilla. Cook until butter is melted. Combine the two mixtures and spread onto two large baking sheets. Bake for 20 minutes, stirring every 5 minutes. Allow to cool. Add dry fruit and store in air-tight container.
