Healthy Apple Pie Granola

The House was Quiet and the World Was Calm

poem by Wallace Stephens

I  love the quiet of the house in the mornings and to begin my day reading preparing my heart and mind for what’s ahead. We can plan our days, fill it with activities. One of those activities I love is to create delicious, healthy recipes for my family.

Healthy Apple Pie Granola

Each Fall we get big wonderful Pecans from our trees. I love finding ways to create wonderful dishes with these special treats. Dearest actually calls them ‘the precious’! Combine that with apple season, there are myriads of recipes one could create for their family. It’s so much fun creating recipes that are also healthy – perhaps ones that the family wouldn’t realize was good for them!

This recipe is so easy. In fact, it’s very easy to make big batches to where you could make enough to gift to family and friends this holiday season. I’ve made this recipe as Christmas gifts a few years back.

Instructions

  1. 3 1/2 cups rolled oats

1 1/4 cups wheat germ or Flax seed

    2 tablespoon cinnamon

    1/4 teaspoon clove

    1/2 teaspoon allspice

    3/4 cup raw sugar

    3/4 cup apple butter

    1/3 cup maple syrup

    1 tablespoon vanilla

    1 pinch salt

    1/2 cup diced dried apple

    1/2 cup pecans

    1/2 cup dried cranberries

In a large bowl mix the rolled oats, wheat germ or flax seed, cinnamon, clove, allspice, and raw sugar. Add apple butter, maple syrup and mix well. Incorporate the dried apples, pecans and cranberries. Place on a cookie sheet prepared with parchment paper (you may need to divide this to two baking sheets for crispness) and bake for 25 minutes at 350° stirring occasionally. Remove from oven and thoroughly stir. Return to the oven to continue to cook until lightly browned. Allow to completely cool and store in an airtight container.

I hope you’re having a blessed day, filled with love, joy, and warmth.

What do you love to make when it is cold and blustery?
