I’ve been on a journey these past few months. One that I thought I would never take. It’s been such a marvelous journey and I have learned so much along the way.
This journey is one towards health. It’s one towards a leaner more fit me. I had truly given up. I had battled my weight for decades, practically since my youngest daughter’s birth.
I tried over and over diet after diet. I just couldn’t stick with them or make traction, until recently.
Since then, I’ve discovered so much I can accomplish. I’m turning my ‘I can’t’ into ‘I can!’
This recipe I made this evening for Dearest and I to enjoy. He’s following the same program I am and we couldn’t be more happier.
This recipe incorporates vegetables I didn’t use often because I didn’t think he would like them. Honestly, I didn’t think I’d like them so much.
One of them is cauliflower. For some reason, I thought I really didn’t like it. Now, it’s so popular and versatile. It truly is a wonderful replacement for starchier side dishes.
The other is spinach. I love spinach, but Dearest, not so much.
This soup recipe incorporates them both beautifully. This soup is so much like Olive Garden’s Zuppa Toscana, but healthier.
Hearty and Healthy Chicken Tuscan Soup

Ingredients
- 32 oz Chicken Bone Broth
- 8 oz Ragu Simply Cauliflower Alfredo Sauce
- 12 oz Frozen Grilled Chicken strips
- 1 cup Frozen Spinach
- 1 cup Cauliflower head, chopped
- 12 cherry tomatoes
- 1 tsp Herbs de Provence
- 1/4 tsp garlic salt
- 2.5 oz Turkey Smoked Sausage, sliced
Instructions

In a large soup pot add all your ingredients. Stir well and bring to a boil. Reduce the heat to a simmer and allow to cook for 30 minutes. Serve warm with your favorite crackers or toast.
