One of the best things about Autumn is apples.
I just love farm fresh apples. When the children were still in school and when we lived in the Atlanta area we would travel to North Georgia to the apple farms. Several had hay rides, pumpkin patches and pick your own options.
Making Things with Apples
There’s a wide variety of wonderful dishes you can make with apples. From baking whole topped with spices to applesauce to apple pie.
Apple Dumplings
I have never made Apple Dumplings for my family. Now, having made these – I wonder why! These are so easy, so delicious and the perfect serving size. I used very small apples – that you can find at your grocers now. By the time our dinner was done, these dumplings were ready, hot and fragrant. This is a perfect autumn dessert.
Old Fashioned Apple Dumplings
Ingredients
Pie Crust2 cups all-purpose flour
- 1/2 teaspoon salt
- 2/3 cup shortening
- 6 tablespoons ice-cold water
Apple filling and Syrup1 1/2 cups sugar
- 1 1/4 cups water
- 4 tablespoons butter
- 1 teaspoon ground cinnamon
- 6 + small to medium apples peeled and cored
Instructions

In a saucepan combine 1 cup of sugar, water with three tablespoons butter, and 1/2 teaspoon cinnamon. Bring to a boil and boil for three minutes. Set aside

Combine the remaining sugar, cinnamon. set aside.
Make PastryIn a bowl, combine the flour and the salt. With a pastry blender cut the shortening into the flour mixture until the pieces are approximately pea-size. Sprinkle 1 tablespoon of the water over a portion of the flour-shortening mixture and gently incorporate with a fork. Push the dough together with the spoon and place to the side of the bowl. Repeat with the remaining water using 1 tablespoon at a time until all of the flour is moistenend. Divide the dough into two balls and roll out into disks - cut circles from dough.

Roll prepared pastry into rectangle and cut out six circles

Place each peeled and cored apple in the center of the pastry circle. Spoon the cinnamon-sugar mixture into the apple and add remaining butter cut into cubes to each apple. moisten the edges of the pastry and wrap around apple sealing well. Place the pastry covered apples in a 13 by 9 inch baking dish. Pour cinnamon syrup around the apples. Bake at 375 degrees for approximately 45 minutes or until the crust is golden brown and the apples are tender. Serve warm alone or with vanilla ice cream
