Tea time just got sweeter – and lighter! I love to take a break in the afternoon, to recharge and what better way to do it than at teatime. I have seen pumpkin puree used to make spicy, wonderful muffins…and then I thought – how about with chocolate? So, I came up with this recipe for Yummy Light Chocolate Pumpkin Muffins.
Dearest and I are doing what we can to lighten up and change our eating habits for our health. As part of our new routine we’re still enjoying snacks. We’re just trying to go lighter. These fit nicely.
This is a super easy recipe too! I chose German Chocolate as part of the recipe, but I’m sure any of the chocolate flavored cake mixes would work. I also love chocolate and cinnamon combined. This delightful treat takes care of those times I want something chocolate and sweet!
I also love that these can be frozen and brought out at any time we want a treat during the day – or as part of our new diet!
The pumpkin puree and applesauce add just the right flavor and moisture to the muffins. I love using applesauce in muffins – check out this recipe. This recipe make it a fantastic muffin during the Fall season. But, we don’t have to limit it so this is to one season…enjoy this light, delicious muffin any time of the year!
Chocolate Pumpkin Muffins
This is a delicious light treat for your tea time or for any time.
Ingredients
- 1 Box German Chocolate Cake Mix
- 1 15 oz can Pumpkin Puree
- 1/2 cup Applesauce
- 2 tbsp Ground Cinnamon optional
Instructions

Place all ingredients into a medium mixing bowl. Mix just until all ingredients are fully mixed. Place muffin cups in muffin pan and scoop batter into the cups - nearly full. You should have twelve muffins. Bake at 350 for approximately 20 minutes. Serve warm or any time!
