reminiscing…when I was a teenager, we had just
moved to South Carolina from California. We
moved near my aunt and uncle’s family and as a
family treat, after evening Church service on
Sundays, one of my cousins would drive over to
the local, ‘Bob’s Big Boy‘ restaurant and order a slew
of these delicious cakes. To me they were huge and
it was fun to sit around as a family enjoying this
wonderful treat. Many years later, this weekend after
church, my son was over and I made these cakes –
one for now and one in the freezer – I had never made
these delicious treats for my children before –
not sure why…When I brought them out their eyes
grew huge and they quickly dove into these ice
cream cakes…I think it may be an occasional Sunday
afternoon treat – when they’re all home visiting.
Making memories can sure be sweet.

Hot Fudge Ice Cream Cake
Ingredients
- Chocolate Cake
- 1 package chocolate cake mix
- 4 large eggs
- 1 cup sour cream
- 1/2 cup warm water
- 1/2 cup vegetable oil
Instructions

1. Place the rack in the center of the oven

and set the temperature to 350 degrees.

Prepare two square baking pans with
-
shortening and a light dusting of cocoa.

set aside.

2. Place the cake mix, eggs, sour cream, warm
-
water, and oil in bowl of an electric mixer.
-
Blend on low for about one minute. Stop the
-
machine and scrape down then increase the
-
mixer speed to medium and beat for two
-
to three minutes. The batter will be thick.

3. Divide the batter between the two pans
-
Make sure the batter is well distributed
-
to the edges of the pans.

4.Bake the cake until the center springs
-
back when lightly pressed and the
-
sides just begin to pull away. Begin
-
watching around 30 minutes.

5.Remove from the oven and set for 5 minutes.

Turn over on wire rack.
How to Assemble Hot Fudge CakeYou may wait until the cake is fully cooled
-
or prepare this dessert with the cake slightly
-
warm. Cut the cake into squares - you can
-
determine how big! Divide each square piece
-
in half horizontally. Place the bottom of the
-
slice in the dessert dish.

Using good vanilla ice cream, turn out
-
the whole container onto a cutting board
-
and slice squares of the ice cream
-
from the bottom.

Place the square of the ice cream on the
-
bottom layer of the cake and top
-
ice cream with the top of the cake.

Drizzle hot fudge sauce over the
-
top of the cake. Place a dollop of real
-
whipped cream atop the cake and finally top
-
with a maraschino cherry.
