I’ve been on a journey these past few months. One that I thought I would never take. It’s been such a marvelous journey and I have learned so much along the way.
This journey is one towards health. It’s one towards a leaner more fit me. I had truly given up. I had battled my weight for decades, practically since my youngest daughter’s birth.
I tried over and over diet after diet. I just couldn’t stick with them or make traction, until recently.
Since then, I’ve discovered so much I can accomplish. I’m turning my ‘I can’t’ into ‘I can!’
This recipe I made this evening for Dearest and I to enjoy. He’s following the same program I am and we couldn’t be more happier.
This recipe incorporates vegetables I didn’t use often because I didn’t think he would like them. Honestly, I didn’t think I’d like them so much.
One of them is cauliflower. For some reason, I thought I really didn’t like it. Now, it’s so popular and versatile. It truly is a wonderful replacement for starchier side dishes.
The other is spinach. I love spinach, but Dearest, not so much.
This soup recipe incorporates them both beautifully. This soup is so much like Olive Garden’s Zuppa Toscana, but healthier.
If you're looking for a delicious, yet light soup…this is perfect for you.
In a large soup pot add all your ingredients. Stir well and bring to a boil. Reduce the heat to a simmer and allow to cook for 30 minutes. Serve warm with your favorite crackers or toast.
I’m enjoying creating healthier meals for Dearest and I. Eating healthy has made many great changes in our lives. We have a lot to look forward to and a lot of good healthy living in our future.
Being still. Those moments when we pause and breathe and take in the beauty of the world around us are becoming too infrequent. All too often our schedules are full from sunrise to sunset. We are so connected in so many ways and we receive instant notifications in either messaging, emails, news, weather, and any […]
Serene Sunday February is known as the month of love. This is the time that we remember those we are affectionate toward with gifts in flowers, candy and more… I’m reminded this morning of how marvelous love is. How wonderful the experience it is to feel love towards another. We have a new granddaughter. We’ve […]
