National Coffee Day!
I just love a good cup of coffee! Coffee has been a big part of my family’s life for generations. I remember that no matter what time of day, the coffee pot was going. I often say that coffee runs in my veins! With the cool autumn days, I thought these Swedish Ginger cookies would be a fantastic compliment to a good cup of coffee.
Ginger Cookies with a Difference
The warm, fragrant flavor of ginger is enhanced by the smoky flavor of bacon fat. What I love about these cookies is that they’re crispy and chewy at the same time – perfect!

Swedish Ginger Cookies
Ingredients
- 1/2 cup bacon fat
- 1 cup sugar
- 4 Tbsp molasses
- 1 egg
- 2 cups all purpose flour
- 3/4 tsp salt
- 2 tsp baking soda
- 1 tsp cinnamon
- 1 tsp ginger
- 1 tsp cloves
Instructions

Preheat oven to 350 degrees. Cream bacon fat and sugar; beat in molasses and egg. Add remaining ingredients and combine thoroughly. Shape dough into walnut sized balls; roll in sugar and flatten, place on parchment lined baking pan. Bake for 10 to 12 minutes until lightly browned and crackled on top - cool on baking racks. Store in airtight container.
